Job Description

Proper Hospitality is seeking an Executive Sous Chef to join the Heart of House at Montauk Yacht Club, our 107-room luxury property within The Collective.

Spanning 35 acres on Montauk’s Star Island, Montauk Yacht Club offers waterfront views, a private beach, three pools, multiple dining options and over 200 wet slips that can accommodate boats from small day cruisers to 300-foot superyachts. Holding eight decades of East End history as an elite social club and thoughtfully reborn for the modern traveler, guests can expect classic East Coast architecture, well-appointed interiors and detail-driven amenities. 

The Executive Sous Chef will work closely with the Executive Chef to oversee the day-to-day operations of the kitchen, ensure the highest standards of food quality and presentation and lead a team dedicated to delivering extraordinary dining experiences for our guests.

Key Responsibilities:

Culinary Excellence

  • Collaborate with the Executive Chef to create innovative and seasonally inspired menus that reflect the hotel's brand and commitment to quality
  • Ensure all dishes are prepared to the highest standards of quality, taste, and presentation
  • Maintain awareness of industry trends and introduce new techniques and ideas to keep the culinary program fresh and competitive

Leadership & Team Development

  • Supervise and mentor the culinary team, fostering a positive and collaborative work environment
  • Lead pre-service briefings, training sessions and performance evaluations
  • Assist in recruiting, hiring and retaining top culinary talent

Operations Management

  • Oversee daily kitchen operations, including food preparation, inventory management and equipment maintenance
  • Monitor food costs and ensure budgetary compliance by minimizing waste and optimizing resources
  • Ensure adherence to health, safety, and sanitation standards in all areas of the kitchen

Guest Engagement

  • Interact with guests to gather feedback, accommodate special requests, and enhance the dining experience
  • Partner with front-of-house staff to ensure seamless coordination between kitchen and service teams

Special Events & Custom Experiences

  • Support the planning and execution of private events, seasonal promotions, and bespoke culinary experiences
  • Collaborate with other departments, such as marketing and sales, to create unique offerings that enhance the hotel's brand

Qualifications:

  • Minimum 5 years of culinary experience in luxury or upscale establishments, with at least 2 years in a leadership role
  • Culinary degree or equivalent training preferred
  • Strong knowledge of diverse cuisines, culinary techniques, and industry trends
  • Proven ability to manage a team and work in a fast-paced, high-pressure environment
  • Exceptional organizational and multitasking skills
